Autumn is here and so is the need for warm bread. Butter it alone, have it with a hot bowl of soup, or bake into croutons for a hearty winter salad. 

This vegan bread is healthier than the bread you get in the store — have you seen the ingredients list of store-bought bread? Yikes  and tastes better too. It’s almost too easy to make, because all you need is time.

Recipe

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup unbleached all purpose flour
  • 1/4 cup chia seeds
  • 1/4 cup quick cooking oats
  • 2 tsp salt
  • 1/4 tsp cane sugar
  • 1/2 tsp active dry yeast
  • 1 1/2 cups warm water

In a large mixing bowl, combine all dry ingredients with a whisk. Add in the water, mixing with your hands until just incorporated. The dough will be rough. Cover the dough with a wax fabric wrap (or plastic wrap if you don’t have one) and let sit at room temperature for 12 hours.

At the end of the 12 hour period, lightly flour a piece of parchment paper. Preheat oven to 455 degrees Fahrenheit, and adjust the oven rack to the lowest position. Place Dutch oven inside and let get hot. 

Shape dough into a ball and place on the parchment paper. When oven and Dutch oven are preheated, place the parchment paper with the dough inside the Dutch oven.

Bake with the Dutch oven lid on for 35 minutes. Remove lid and bake for 5 more minutes.

Remove Dutch oven from oven, take out bread loaf and set on a cooling rack (caution: bread loaf is hot!).
