Make the dessert that my family ate in less than five minutes post-oven retrieval!
This dessert is based on a sandwich I had when I first came to Atlanta for college — it featured apple slices, brie cheese, and local honey on sourdough toast. Once the restaurant closed down, I’d always longed for the taste again. And then boom: quarantine baking happened.

Easy Apple + Honey + Cheese Pinwheels
Time: 30 minutes
Yield: ~15 pinwheels
Ingredients:
- 1 pre-made puff pastry dough sheet (I used a vegan version)
- 1/4 cup honey***
- 1/4 cup vegan brie or mozzarella cheese, melted
- 1 medium Granny Smith apple, diced
- 1 tsp confectioner’s sugar, for garnish
Instructions:
Thaw the puff pastry dough. For a quicker thaw, wrap folded sheet in a paper towel and heat on 10 second increments, flipping dough over after each increment, until thawed.
Spread the honey over the puff pastry dough evenly. Then, pour melted vegan cheese over the honey, spreading with a spoon if needed. Sprinkle diced apples over the honey and cheese, and try to make it even.
Starting with the short side of the dough, roll up the sheet. Chill for 10 minutes in the freezer.
Cut roll into 1/2″ slices and place onto a greased baking sheet. Bake at 400 degrees Fahrenheit for 16 minutes, or until golden brown.
Place on a plate to cool and sprinkle with confectioner’s sugar.

***Note: I know some vegans have issues with honey. However, I only use honey from my father’s beehives, and he must remove honey to keep the beehives healthy. To me, it is more wasteful to not use it if it would be thrown away. Our honey is unprocessed and no bees are harmed in the retrieval of honey.
