The word “hummus” means chickpea in Arabic; cultivation of chickpeas dates back to over 10,000 years ago in Turkey. Enjoy this Middle Eastern treat today with a few simple ingredients and less than 30 minutes of work!

Roasted Garlic Hummus Recipe

Yields almost 6 cups of hummus.

Ingredients:

  • three 15 oz. cans chickpeas (~ 4.5 cups)
  • 2/3 cup aquafaba, the liquid in the chickpea cans
  • 1/2 cup tahini
  • juice of 1 lemon (~3 tablespoons)
  • 1/3 cup roasted garlic
  • 1 tbsp fresh minced garlic
  • 1/4 cup roasted garlic oil
  • 1/2 tsp sea salt
  • 1/4 tsp cayenne pepper (to taste)
  • optional chopped parsley
  • optional drizzle of extra virgin olive oil

Equipment needed:

  • food processor or blender

Instructions:

  • In a food processor or blender, add chickpeas and aquafaba. Pulse to create a rough paste. 
  • Add 1/2 cup tahini, juice of 1 lemon, the roasted garlic, the fresh garlic, salt, and cayenne pepper, and pulse to combine until the consistency is smooth. 
  • To thicken, pour the roasted garlic oil slowly as you pulse the blender until garlic oil is mixed thoroughly.
  • Place in an airtight container; in my experience, it keeps well for a week and a half.
  • When eating, you may choose to add parsley or olive oil.
