This grilled tofu with harissa grapefruit sauce and cilantro couscous is a healthy quick vegan option that takes just twenty minutes to prepare.

Ingredients:

  • 1/3 block of tofu, sliced
  • 1 2/3 tbsp olive oil
  • 1 tbsp harissa seasoning
  • 1 tbsp water
  • 1 tbsp grapefruit juice, freshly squeezed
  • 1/4 tsp raw honey
  • 1 tsp salt
  • 1 tsp cilantro, dried
  • 1/4 tsp ground cumin
  • 1/4 tsp black pepper, freshly ground
  • 1/3 cup couscous
  • 1/4 tsp salt for couscous
  • 1/2 cup water for couscous
  • cilantro for garnish

On a grill pan, heat 1 tbsp olive oil to medium-high, and grill tofu on each side for about 5 minutes or until crispy golden brown on the outside. It will still be soft on the inside; grill for longer if you prefer it crispier.

Mix harissa seasoning, 1 tbsp water, grapefruit juice, raw honey, salt, ground cumin, and ground black pepper until ingredients are evenly distributed.

Boil 1/2 cup water and 1/4 tsp salt, and then pour in the couscous. Turn off the heat and let couscous soak up the water.

Plate couscous and tofu pieces, and pour sauce over. Use a slice of grapefruit for garnish if you like.
