
Light and zesty, these are a great afternoon snack to go with tea or coffee.

Vegan. Makes about 10 cookies.
Ingredients
- Zest of one lemon
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp blue agave syrup
- 2 tbsp chia seeds
- 3 tbsp semi solid coconut oil
- 1/3 cup coconut palm sugar
- 1 tbsp turmeric
- 1 1/4 cup all purpose flour
- 1 tsp baking powder
- 1/8 tsp salt
- 2 tsp avocado oil
- 2 tbsp brown sugar + dash of salt
Preheat oven to 350 degrees Fahrenheit. Mix the lemon zest, lemon juice, agave syrup, chia seeds, coconut oil, and palm sugar in a bowl until relatively smooth. Add the rest of the ingredients (save the brown sugar and dash of salt), mixing and kneading until it forms a dough. Pinch off portions of the dough, roll into small balls, and after pressing them onto a greased baking sheet, either sprinkle with sugar salt mixture OR place sugar salt mixture into a ramekin and press the cookie into the mixture before laying on the baking sheet. Bake for 10 minutes, and serve.
