The perfect hearty lunch for summer.

Yields 2 sandwiches.

Ingredients:

  • 1 15oz can great northern beans
  • 1/2 avocado, diced
  • juice of half a lemon
  • 2 tsp spicy brown mustard
  • 1 tbsp fresh basil leaves
  • salt and pepper to taste
  • 1/4 cup red onion rings
  • 4 slices multigrain seeded bread
  • 2 pats vegan butter

Begin by draining the can of beans and rinsing them. Place them in a bowl and use a fork to mash them slightly. Add in the avocado and lemon juice and continue mashing and mixing, until everything begins to stick together. Add the mustard, basil, salt and pepper. 

Toast the bread and put butter on one side of each slice. Place your mashed mixture on top of the buttered slice, add onion rings, and top with a second slice of buttered toasted bread.
