A healthier, tastier version of the beloved Hot Pocket.


Yields 1 omelette.
Ingredients:
3 eggs, whites only
1/4 cup red onion diced
1/8 cup Roma tomato diced
1/8 cup sharp cheddar cheese shredded
1/4 cup tofu, finely diced.
3/4 cup baby spinach
salt and pepper to taste
Pour egg whites into a small skillet in low to medium heat. When egg whites are almost completely firm, place red onion, Roma tomato, sharp cheddar cheese, and tofu only on one half of the circle of egg whites. Salt and pepper egg white before folding it over. Place omelette on bed of spinach. Salt and pepper over the top.
