A light and savory Thai-inspired cauliflower bowl.

Bowl ingredients:
1/2 avocado, sliced
1/2 cup chickpeas
1/4 tsp garlic powder
1/2 cup spinach (or mixed greens)
1 tbsp chopped peanuts
1/4 cup sliced red onion
1/3 cup assorted sliced red, yellow, and orange bell pepper
1 tbsp sliced green onion
A sprinkle of dried cilantro
1/2 cup cauliflower rice, cooked
A sprinkle of black sesame seeds

Dressing:
1/2 tsp red curry paste
2 tbsp lite coconut milk
1 tbsp sesame oil
1 tbsp apple cider vinegar
1/8 tsp salt
1/8 tsp ground black pepper
1/4 tsp garlic powder

Drain chickpeas from can, and let air dry. Sautee on medium heat, with 1/4 tsp garlic powder, and light salt and pepper until crispy. While chickpeas are cooking, assemble the bowl. Put the greens on the bottom, then add cauliflower rice and peanuts. Then, arrange red onion, bell peppers, and avocado. Sprinkle cilantro and green onion over cauliflower rice. When chickpeas are done, add to bowl. Pour dressing over top of everything, and enjoy.
